Pizza Pull-Apart Bread

2 – 16.3 oz can of large southern style biscuits (8 in each can)
1 – 14.5 oz jar of pizza sauce
1/2 green pepper, seeded and diced
1/2 onion, diced
3 oz pepperoni, coarsely chopped
2.25 oz can sliced black olives
2 cups mozzarella cheese, divided
1/4 cup grated Parmesan cheese

Slow Cooker Beef Stew

Slow Cooker Beef Stew. It takes a couple minutes in the morning, but you will be SO HAPPY when you get home from work! I stir in a little sour cream to cool it off. Serve with Yellow Squash Muffins and Sweet Potato Custard Pie if you want your family to fall in love with you all over again.
beef for stew cubed- 1½-2 lbs
potatoes, russet or golden- 2 large, peeled and diced
carrots- 2-3 large, peeled and diced
celery- 3 leafy stalks, peeled and diced with leafy part
green beans, fresh- ¼-½ lb, trimmed and sliced in half
beef concentrated stock- 1 tub (or 3 beef bouillion cubes) *like Swanson Flavor Boost or Knorr Homestyle Stock
diced tomatoes- 1 28oz. can or two 14oz. cans
dried parsley and thyme- 1 teaspoon each

Easy Zucchini Bread

Zucchini bread may possibly be my most favorite way to eat vegetables.  So moist, sweet, and delicious!  I could probably eat an entire loaf in one sitting.
1 cup chopped pecans, divided
1 (18.25 oz.) spice cake mix
1 1/4 cups milk
1/2 cup canola oil
3 large eggs
2 cups shredded zucchini (approx. 3 small or 1 medium zucchini)

Crock-pot Lasagna

Lasagna is a classic Italian meal. Sadly, it can take a lot of time to prepare and is generally not thought of as a quick weeknight supper. Well, we have changed that! This soup has all the flavors of lasagna but it's cooked in a slow cooker and can cook all day while you are at work!  Delicious!
1 lb. Italian sausage (OR 1 lb. ground meat) (**I bought Italian Sausages made from Turkey)
1  26 oz jar pasta sauce
3/4 cup water
12 no-boil lasagna noodles
1  15 oz container ricotta cheese
1  8 oz package shredded Italian blend cheeses (**I forgot to pick up Italian cheese blend, so I used what I had on hand. Shredded Colby Jack and Parmesan. Shut up. It was just as good!)

Taco bites

I'm pretty much a fan of anything that's bite-sized.  I'm the girl that hovers over the snack table at parties, shoveling little bite sized pieces of deliciousness into my mouth by the handfuls.  This little number is the perfect little bite-sized dish.  I pretty much think it's the perfect appetizer!

  • Ground beef (alternatively, ground turkey would work)
  • Wonton wrappers (you can make your own using this , or buy them pre-made. They can usually be found in the frozen section)
  • Taco seasonings (again, you can make your own by mixing together a bunch of seasonings, or just buy the little packets)
  • Shredded cheese
  • Assorted taco accoutrements: taco sauce, sour cream, lettuce, tomatoes, jalapeƱos, onions...etc.
  • 2/3 cup water

Crock Pot Mac and Cheese

Crock Pot Mac and Cheese - A great meal to make in your crock pot on a busy day. So cheesy and creamy!

  • 16 ounces macaroni
  • 16 ounces Monterey Jack cheese, cubed
  • 16 ounces Colby cheese, cubed
  • 16 ounces Velveeta (cubed)
  • 1 stick of butter, cut into slices
  • 16 ounces milk
  • salt & pepper, to taste
