Pretzel Pizza Rolls

Pretzel Pizza Rolls Not sweet but a great way to keep the kiddos happy during a move! And that's sweet!
Ingredients:
  • 1 cups milk
  • 1 tablespoon active dry yeast
  • 3 tablespoons brown sugar
  • 2 tablespoons butter, melted
  • 2 1/4 cups flour (or more)
  • 1/2 tablespoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1 teaspoons fine salt
  • 1 cup shredded mozzarella
  • 1/2 cup chopped pepperoni

Hot Fudge Oreo Cupcakes

This dessert pulls together alot of my favorite things – Ice cream, oreos, hot fudge!! Thank goodness these are made into little individual servings…maybe I could stop myself at just 1, okay maybe 2! :)

Grilled Cheese with Tomato and Pesto

My family LOVES grilled cheese sandwiches, but I tend to get bored with them, so I am always looking for unique ways to make grilled cheese. Pesto Grilled Cheese sandwiches are a big favorite of mine. I love using my garden’s tomatoes and pesto made from the basil right out of my garden as well. These sandwiches are easy and even kid friendly.

  • Bread (I used white, but the original uses sourdough which I bet is scrumptious)
  • Mozzarella cheese (that you can slice to desired thickness)
  • Tomatoes

Samoas Bars

These look utterly, utterly delicious and decadent. Bad for a diet, bad for swimsuit weather, but oh so good for one last winter treat. Sydney even gives very helpful step-by-step photos for the whole process of baking these.

Stromboli

There’s a little Italian restaurant and deli near here that has the best stromboli ever.  It’s nearby but not close enough to make a quick and easy run for takeout.
Ingredients:
  • Pizza Dough
  • Genoa Salami
  • Ham
  • Pepperoni
  • Provolone
  • Mozzarella
  • Egg Yolk
  • Olive Oil
Instruction
  • Preheat the oven to 400.  Flour a work surface and roll the dough out into a rectangle.

  • Start layering the meat in the center, leaving an inch or two along the edges. Add provolone and mozzarella.  I used chunks of mozzarella but grated would probably work fine too.

  • Combine the egg yolk with a couple tablespoons of water and brush the egg wash around the edges. It’ll help the dough stick together when you roll it up.

  • Ready to roll.

  • Starting along one long edge, gently roll it up.

  • Pinch the edges together to seal it.  Tuck the ends under and pinch them together.

  • Place it on a baking sheet, seam side down.  Coat the top and sides with a little olive oil.  You could sprinkle it with a little granulated garlic if you like.

  • Bake at 400 for about 20 to 25 minutes.

  • Cut it into slices.

  • Serve with sauce alongside.  Enjoy!

Caramel Pretzel Magic Bars

Caramel Pretzel Magic Bars. You basically have a crust (grahams, chocolate grahams, crushed oreos, crushed vanilla wafers, etc), a binder (sweetened condensed milk), & toppings (chocolate chips, nuts, coconut, candies, pretzels, etc). Easy!
Ingredients

  • 1 1/2 cup graham cracker crumbs
  • 6 Tbsp butter, melted
  • 1-14oz can sweetened condensed milk
  • 50+ pretzels (I used Snyder's Snaps)
  • 20 caramels, unwrapped & cut in fourths (*They now sell caramel bits at the store near the chocolate chips! So much easier than unwrapping & cutting up caramel squares. I would try 1 cup of caramel bits if you aren't using the squares.)
  • 1 cup milk chocolate chips
  • 1 cup sweetened coconut flakes

Instructions

  • Mix graham cracker crumbs with melted butter & press in a sprayed 13x9in pan.
  • Pour about half the can of condensed milk over crust.
  • Layer your pretzels as close together as you like over the condensed milk/crust.
  • Sprinkle caramels, chocolate chips, & coconut flakes.
  • Pour remaining half of condensed milk on top.
  • OPTIONAL: Break up some extra pretzels to put on top, with a few extra chocolate chips so you can see all the colors above the condensed milk.
  • Bake at 350*F for 20-30 min until lightly brown. Let cool completely before cutting & serving.

Slow Cooker Chicken Fettuccine Alfredo

A super easy recipe for a creamy, delicious chicken and broccoli fettuccine Alfredo.
Ingredients

  • 2 tablespoons minced garlic
  • 1/4 cup olive oil
  • 1 pint cream
  • 2 boneless, skinless chicken breasts (sliced)
  • 2 overflowing cups broccoli florets (one package Cascadian Farm frozen)
  • 9 ounces refrigerated fresh fettuccine (one package)

Instructions

  • Put the garlic and oil into the slow cooker and turn it on high. Let it sit 40 minutes until the garlic shows evidence that it is beginning to brown.
  • Add in the chicken and cream and let it go another 40 minutes.
  • Stir in the broccoli and noodles and 1/4 cup of water. Cook 30 minutes or until it begins to simmer. Serve.

Skinny Lasagna Rolls

Skinny Lasagna Rolls are perfectly proportioned, filled with delicious, traditional Italian ingredients including flavorful herbs and spices. Skinny Lasagna Rolls are a healthy alternative to regular lasagna in individual-sized rolls, and low-calorie too. Make Skinny Lasagna Rolls ahead of time and keep them in the freezer for a healthy recipe that pleases the whole family.
Ingredients
  • 9 lasagna noodles, cooked
  • 10 oz frozen chopped spinach, thawed and completely drained
  • 15 oz fat free ricotta cheese (I like Polly-o)
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • salt and fresh pepper
  • 32 oz tomato sauce
  • 9 tbsp (about 3 oz) part skim mozzarella cheese, shredded
Instruction
  • Preheat oven to 350°. Combine spinach, ricotta, Parmesan, egg, salt and pepper in a medium bowl. Ladle about 1 cup sauce on the bottom of a 9 x 12 baking dish.
  • Place a piece of wax paper on the counter and lay out lasagna noodles. Make sure noodles are dry. Take 1/3 cup of ricotta mixture and spread evenly over noodle. Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles.
  • Ladle sauce over the noodles in the baking dish and top each one with 1 tbsp mozzarella cheese. Put foil over baking dish and bake for 40 minutes, or until cheese melts. Makes 9 rolls.
  • To serve, ladle a little sauce on the plate and top with lasagna roll.

Salted Caramel Pretzel Bark

Um yes I do believe I will be trying this maybe even tonight. Except of course, you know me I go quick and easy so I would probably use premade caramel, but this looks too amazing not to try... right now.
