Stuffed Green Peppers with Brown Rice, Italian Sausage, and Parmesan

I absolutely love green peppers, and forwarded this to my boyfriend (the household cook) . He has never liked stuffed peppers and put off making it until last week, and it was the biggest hit! We all loved them, and my one-year-old couldn’t get enough of the filling, which is great since it has all the veggies in it.
Ingredients:

  • 1 C long-grain brown rice (I used Uncle Ben’s Brown Rice, but any long-grain rice will work.
  • 4 large green bell peppers, bottom trimmed, cap end cut off and diced, and seeds removed
  • 1 large onion, diced
  • 2 tsp. + 1 tsp. olive oil
  • 2 links (about 8 ounces) turkey Sweet Italian Sausage (or other sausage of your choice. Use diced mushrooms instead of sausage for vegetarian version.)
  • 1/2 tsp. ground fennel
  • 1/2 tsp. dried Greek or Turkish oregano
  • 1/2 cup grated Parmesan cheese

Eggplant Pizzas

Eggplant Pizzas - I love egg plant w/ just about anything... but especially with tomato sauce!!! Great in so many ways. Its gluten free, and vegetarian friendly. This would also be easy to make slightly healthier . . . . or not :)
Ingredients:
  • 1 globe eggplant, about 8 ounces and 9-10 inches long
  • about 1 T salt, for drawing water out of eggplant
  • about 2 T olive oil, for brushing eggplant before roasting
  • about 2 tsp. dried Italian seasoning, for sprinkling on eggplant before roasting
  • 10 large basil leaves, cut in chiffonade strips (optional)
  • 1/3 cup freshly grated Parmesan
  • 1/3 cup finely grated low-fat mozzarella blend

Crispy Cheddar Chicken

This was delicious. I got carried away with the cheese – not good as it went everywhere, but the chicken was crunchy, tasty and very moist. I used thighs and they were fantastic and greek yoghurt instead of milk . Love this recipe as it was so easy and delish. Will definitely make again. Great for a large platter with the sauce on the side.

Stuffed Flank Steak

I'm typically not one to stuff or roll anything, yet as of late, that's what I've been doing. Strange, I know. Part of this rolling phenomenon might be the fact Zoe and I like our meat two distinct different ways: dead and alive. If I have to grill steaks, I start one mega early to make time for Zoe's English understanding that cooked meat is devoid of pink and absolutely all life. I, on the other hand, prefer a little fight left in my beef. Brown Sugar Honey Marinated Salmon with Caramelized Pineapple Quinoa

A delicious summer meal: salmon in a sweet brown sugar honey marinade with a gorgeous pineapple quinoa.

Ingredients:
For salmon:

  • 1 pound salmon
  • 1/4 cup packed brown sugar
  • 1 tablespoons honey
  • 1/2 cup reduced sodium soy sauce, gluten free if desired

I found this recipe and this is absolutely amazing!I just cooked this up, and it is absolutely delicious. I used a little less butter because I prefer it to be a little more crisp, but it is absolutely delicious!

  • 1 cup soft plain breadcrumbs ( The recipe suggest homemade breadcrumbs, but I use store bought - not Italian breadcrumbs, just plain)

Oh yum! Looks like a protein-filled, healthy breakfast. We should be eating more vegetables and this is a great way to do it! Whenever I eat broccoli at breakfast, I feel that my day is off to a virtuous start.Enjoy!

Chicken Roll Ups

They are so versatile and easy, not to mention delicious. We had these for a weeknight easy dinner but they would make great appetizers too. I wouldn't recommend adding any extra spicing as the bacon bits and ranch add enough on their own.

Greek Salad Recipe

The Dentist Chef has two occupations: a dentist and a chef. Of course, if you’re willing to take his advice about oral hygiene, why not take his advice about tasty meals? This Greek Salad Recipe is definitely one to try. It has cucumbers, olives, tomato, and feta cheese! Baked Vegan Zucchini Fries

Baked vegan zucchini fries. These were easy and delicious! The panko bread crumbs make all the difference. Also, one of my zuchhini's was getting pretty soft on the outside (the skin could rub right off in places), but the middle was still fine! So I cut all the skin off and made these, a great way to save an almost-gone vegetable.

  • 2 cups plain almond or soy milk

Spinach and Tomato Chicken

This was marvelous! I browned the chicken a little first with some olive oil and fresh garlic before putting on top of spinach.. I used feta cheese instead of parmersan and it added a really nice salty flavor. I also added a little bit of white wine in with the broth. Probably should have added more because I couldn’t taste it at all. Regardless excellent recipe!
